Where did Summer Go?

OK, so I may have misled you people.  I promised to me back to blogging and well, I did not live up to my promise.  So here I am sitting at my desk at work at 7:15AM in the morning, with a little time to spare before my workday starts at 7:30AM and I was thinking about my little blog and serious lack of recent (can you say, “understatement”?) entries.  I should not have committed to updating in my last post.  What I should have done was just take post that I was taking the summer off. Which I did kind of, I mean I did work but I did spend a lot less time in the kitchen.  The reason…pretty simple actually…it was so bloody hot this summer and the thought of turning on that oven was just as appealing as watching paint dry.  We live in a very old house so we only have two window AC units, therefore, the house it still relatively warm.  I mean it was so hot that I actually went to sleep downstairs on the couch to get some relief.  But now the weather is changing the mornings are cool and frankly there is no excuse for me anymore.  I’m actually looking forward to getting back in the kitchen with my camera, during the summer I have collected like a zillion recipes and bought a few (read half a dozen) new cookbooks.  I find I always do a lot of baking in the fall and winter which is great except for the fact that when I do my baking after work it tends to be dark out already, so I’m limited in how much natural light I can shoot in.   

 Well enough about me.  I hope you all had a great summer.  I personally love the heat and with a proper AC unit I could probably live in warm climate all year-long.  If you’re still around I thank you and I will get back to blogging soon.

Weekend baking…for dinner!

What we have here is a cake, but not your typical cake or maybe it’s a pie…after all it does have a crust, but it’s also layered, confused yet? 

This is a potato “cake”; I’ve been making this for years.  It’s one of those recipes that’s been in my family for decades, my mom made it, my grandmother made it and now I’m making it.  I learned not from a recipe but by watching my mom.  The only difference between my version and that of my mom’s it that she puts the bread crumb crust on the top of the cake and I out it on the bottom. 

This cake boasts two luscious layers of mashed potatoes, sandwiched in between is homemade salami (I’m Italian, is there any other kind of salami?) , mozzarella, hardboiled egg and parmesan cheese.  It’s assembled and baked to delicious goodness in a 9-inch spring form pan. Continue reading

The last post I well posted was about the arrival of spring, and that was pretty much it.  I posted a pretty picture of my Cherry Tree in bloom, which by the way produced very little cherries and whatever it did produce got stolen from unsuspecting older couple across the street…….what I really mean to say is that I didn’t get to bake my cherry pie this year.

When I first started this blog I had every intention of updating it weekly with the delicious goodies I baked.  Well I did bake I just never updated.  At first I justified it as not having the time, but let’s get serious I have all the time in the world.  Then I told myself that I need to invest in a new camera, because quite frankly the one that I have isn’t the greatest and the pictures don’t do justice to my creations. Again, that was just another excuse and then I just kind of forgot about it.  I still continued to follow my favourite blogs, have I ever told you how much I love Joy,  she’s all the Blog I will ever need.  But seriously, I am back and I promise, PROMISE to post…at least once a week 😉

Lenox Almond Biscotti

It’s been some time now that I have become obsessed with baking…I find it very therapeutic.  And to be totally honest I usually have only a bite of whatever it I bake, mostly because I don’t really have much of a sweet tooth.  Don’t get me wrong, I love chocolate cake as much as the next 30something year old gal….but most often then not I’ll tend to reach for a bag of Doritos instead.

OK, I’m getting a little off track here, yes back to baking.  I find most of my recipes on-line, and that’s when I discovered Dorie Greenspan and wondered where she has been all my life.  I tried a few recipes of hers and loved them, they are so easy to follow and the result is always a winner.  I finally decided to purchase Dorie’s book; Baking: From my Home to Yours . When the book arrived I couldn’t wait to start baking and it was at that time that I also thought that it would be a great idea to start a Blog. Continue reading

Welcome….

Well I have finally entered the blogging world.  I’m not sure what has taken me so long…ah yes the fear of having to commit. However, in all seriousness, I have navigated through hundreds of blogs in the past months…primarily baking & cooking blogs.  One day while in my kitchen admiring the chocolate éclairs I had just made me thought, “now if I only had a blog…”

Once I finally was able to convince myself that I can do this, I quickly realized that I did not know the first thing on how to set up a blog.  The biggest hurdle…coming up with a name.  Sure I had so many great names, but of course most were taken. I spent hours thinking of a name, even recruiting my husband’s help.  He was able to come up with some pretty creative names…unfortunately not creative enough (I still love you honey!)  Then tonight while surfing the net for a biscotti recipe the name came to me, and it was available.  So here I am.
